Lenten Fare 006: Cooked cabbage

Here is a recipe I use quite often. It is simple and fast to prepare. If it is made without any fat, such as oil, it can be enjoyed hot or cold.

  • Chop a medium cabbage and one yellow onion (or more if you like onions)

  • Put two cans of diced tomatoes or two pint-size bags of frozen tomatoes into a pot

  • Add cabbage and onion

  • Add salt, pepper, any other spice you like (I use smoked chili or smoked paprika)

  • Cook on medium heat until ready

Tomatoes and cabbage provide plenty of liquid for cooking, so there is no need to add any more liquid. Oil can be added if you like, but if you do, the dish would need to be heated before eating. (Real olive oil will solidify in the refrigerator.) On non-fasting days, you can use butter or lard or even bits of fried pork belly, but this is a topic for another time.
